Red Lentil Soup With Feta Cheese

Here's a yummy recipe for cold winter days, red lentil soup with feta cheese from International Food Centre!

What you will need to prepare this delicious soup is here;

  • 140g or 2/3 cup dry red lentils

  • 1 tbsp coconut oil, butter or olive oil

  • 1 chopped onion

  • 1 red pepper deseeded and chopped

  • 3 carrots peeled and chopped

  • 2 garlic cloves chopped

  • 1/2 tbspn caraway seeds

  • 1/2 coriander seeds

  • 1 litre vegetable broth

  • Salt & pepper to taste

  • Feta cheese flakes, mint and parsley

  1. And here's how to prepare it;

  2. Fry the onion, red pepper and carrots in oil in a large soup pan on low-medium heat for around 10 minutes. Alternatively, you can fry until the onions are translucent as well.

  3. Add the garlic, spice and lentils and fry for a minute or two.

  4. Add the broth and let simmer for 15-20 minutes (Or until the lentils and carrots are cooked). You can add more water if needed.

  5. Blend up until smooth, season with salt and pepper to taste.

  6. Serve with crumbled feta cheese, chilly flakes and herbs like mint or parsley if you wish.
